Mac and Trees

Stage 1:

  • 500g macaroni

  • 1 small broccoli, roughly chopped

  • ½ small head cauliflower, roughly chopped

  • ½ tbsp EACH salt, butter and dijon mustard

  • 1 tsp minced garlic

  • 2 cups grated tasty cheese

Roux:

  • 2 tbsp butter

  • 2 tbsp plain flour

  • 2 cups milk

Extras:

  • 1 cup grated tasty cheese

  • ½ cup panko breadcrumbs

01 Preheat oven to 200°C (FF).

02 Cook pasta according to packet instructions, minus 1 minute. Drain.

03 Meanwhile, steam vegetables in a double boiler for 20 minutes, or until tender. Transfer to a large bowl and stick mix until pureed. Add in all stage 1 ingredients and mix well.

04 Transfer mixture into a 20x30cm baking tray and flatten surface.

05 Melt roux butter in a saucepan over medium heat. Add flour and whisk for 2 minutes. Reduce heat to low and gradually add milk. Whisk until sauce thickens. Remove from heat and stir in 1 cup of tasty cheese.

06 Pour sauce over macaroni. Top with breadcrumbs. Bake for 20 mins.
