Chicken Burrito Bowl

We’ve teamed up with the talented @naturally__abby to bring you this show stopping meal. The flavours, the colours, the textures, the smell… we are in love with this quick and easy burrito bowl.

Prep: 10 min | Cook: 10 min | Serves: 2

Chicken Burrito Bowl

  • 1 x 500g Woolworths Chicken Breast Steaks Lemon & Pepper

  • 1 tbsp Mexican chilli spice blend

  • 4 cups spinach and kale mix

  • 4 cups iceberg lettuce, shredded

  • 250g brown microwave rice pouch

  • 1 cup corn kernels

  • 1 red capsicum, diced

  • 2 tomatoes, diced

  • 1 red onion, diced

  • 1 ripe avocado, sliced

  • 1 tbsp peri-peri mayonnaise

01 Heat a frypan on medium heat.

02 Sprinkle the Mexican spice blend onto the chicken breast.

03 Add the chicken to the pan and cook for 2-3 minutes on each side, or until cooked through.

04 Prepare the rice according to packet instructions.

05 Divide the chicken, rice and salad amongst 4 bowls and top with mayonnaise.

Tip:

If you don’t have access to the Woolworths Chicken Breast Steaks Lemon & Pepper, simply marinate 500g of sliced chicken breast with lemon juice, salt and pepper for 30 minutes before cooking, as a suitable replacement.
