Creamy Chicken Gnocchi

Ready in 30 minutes, this creamy pasta is a real crowd pleaser, and is jam packed with vegetables and flavour.

Prep: 15 min | Cook: 15 min | Serves: 4

Creamy Chicken Gnocchi

Stage 1:

  • 1 tbsp sundried tomato oil, from jar

  • 3 chicken thigh fillets, diced

  • 3 garlic cloves, finely diced

  • 4 white cup mushrooms, diced

  • 1 brown onion, finely sliced

  • 1 small zucchini, diced

Stage 2:

  • ½ cup cooking cream

  • 8 sundried tomatoes, diced

  • 1 handful baby spinach leaves

  • ⅓ cup parmesan cheese, grated

Pasta:

  • 500g potato gnocchi

01 Heat oil in a large frypan over medium high heat. Add stage 1 ingredients and cook for 10 minutes, stirring often.

02 Add remaining ingredients and reduce heat to low. Simmer uncovered for 5 minutes.

03 Cook gnocchi according to packet directions. Drain and toss through sauce. Serve.
