Simple Chicken Rissoles

These are a fan favourite amongst the RM community as they’re tasty and super easy to make.

Simple Chicken Rissoles

  • 500g chicken mince

  • 1 small carrot, finely grated

  • 1 small red onion, finely diced

  • ½ cup panko breadcrumbs

  • ½ cup grated tasty cheese

  • 2 tsp fresh or dried tarragon

  • salt + pepper, to season

01 Preheat oven to 180°C.

02 Combine all ingredients in a large bowl.

03 Divide mixture into 8 even rissoles and set aside.

04 Heat a large frypan over medium high heat and drizzle with olive oil. Add rissoles and cook for 3 minutes on each side, or until golden.

05 Transfer to a lined tray and bake for 10 minutes, or until cooked through. Serve with your favourite sides on in a burger.
