Crispy Salmon with Greens
This is such a quick and fresh meal to enjoy, made in just 25 minutes!

Crispy Salmon with Greens
4 (150g) centre cut salmon fillets, skin on + seasoned
1 tbsp butter
4 garlic cloves, thinly sliced
1 small zucchini, sliced into thick sticks
1 bunch broccolini, halved
1 bunch asparagus, ends trimmed and halved
3 large flat mushrooms, sliced
¼ cup slivered almonds
01 Heat a large frypan with 1 tbsp olive oil over medium high heat. Place the salmon, skin-side down in the hot pan (oil should sizzle). Cook until crispy, about 4 minutes. Turn salmon over, lower heat to medium and cook for a further 4 minutes, until cooked through.
04 Meanwhile, melt butter in a large saucepan over medium high heat. Add garlic and stir, cooking for 1 minute, until aromatic.
02 Add remaining vegetables and sauté for 10 minutes, tossing vegetables often.
03 Remove from heat. Sprinkle with almonds and season. Toss and serve with salmon.
Dietaries:
For a dairy free option use olive oil instead of butter. For a nut free option omit the almonds.
