Lemon and Feta Chicken Bake

This is such a simple and delicious recipe, that only requires 10 minutes prep! Prepared in 1 bowl, spread on 1 tray and served with the convenience of microwave rice, this easy dish will become a weekly fav!

Prep: 10 min | Cook: 35 min | Serves: 4

Lemon + Feta Chicken Bake

Stage 1:

  • ¼ cup fresh lemon juice + extra

  • ¼ cup olive oil

  • 1 tbsp fresh or dried oregano

  • ⅓ cup crumbled feta + extra

  • 2 tsp minced garlic

Stage 2:

  • 6 chicken thigh fillets

  • 1 medium zucchini, diced

  • 1 large green capsicum, diced

  • 6 white cup mushrooms, diced

  • 1 cup frozen corn kernels

  • ⅓ cup sliced black olives

Stage 3:

  • 2 x 250g Ben's Original Brown Red + Wild Medley Rice Pouch

01 Add all stage 1 ingredients to a large bowl and whisk to combine.

02 Add stage 2 ingredients to bowl and toss to coat. Cover and refrigerate for 1-8 hours.

03 Preheat oven to 180°C. Pour mixture onto a large lined tray, in a single layer. Bake for 35 minutes, or until chicken is cooked through.

05 Microwave rice according to packet instructions and sprinkle over tray bake. Garnish with extra feta and lemon. Season and toss to combine. Serve.
