Spinach and Feta Chicken Risotto

Say hello to a one pot winner! Oh yes my friends, this hearty tasty chicken dish is made in one pan, and you know what that means......minimal dishes.

Prep: 10 min | Cook: 30 min | Serves: 6

Spinach and Feta Chicken Risotto

Stage 1:

  • 1 tbsp butter

  • 1 brown onion, finely chopped

  • 2 white cup mushrooms, diced

  • 1 medium zucchini, diced

Stage 2:

  • 6 Woolworths Fetta and Spinach Chicken Sausages, decased

  • 1 cup frozen peas

  • 2 cups arborio rice

  • 4½ cups chicken stock

01 Heat butter in a large deep frypan over medium high heat.

02 Add stage 1 ingredients and cook for 7 minutes, stirring often.

03 Add sausages and peas. Cook for 3 minutes, stirring frequently.

04 Add rice and stir to coat. Pour in stock and bring to the boil. Reduce heat to a simmer and cook covered for 20 minutes, or until liquid has absorbed. Season and serve.

05 Season as desired and serve.
