Beef and Bacon Bolognese

Who doesn’t love a good bolognese! This one’s full of flavour and hidden vegetables.

Prep: 15 min | Cook: 40 min | Serves: 4

Beef and Bacon Bolognese

Stage 1:

  • 2 tsp minced garlic

  • 1 large carrot, finely diced

  • 2 white cup mushrooms, diced

  • 1 red onion, finely diced

Stage 2:

  • 1 tbsp basil, finely chopped

  • 500g lean mince beef

  • 3 pieces short cut bacon, diced

  • ⅓ cup tomato paste

Stage 3:

  • 400g can crushed tomatoes

  • 1 cup good quality beef stock

  • 1 tbsp balsamic vinegar

Stage 4:

  • 400g pasta of choice

  • ½ cup grated parmesan cheese

01 Heat 2 tbsp olive oil in a large saucepan over medium high heat. Add stage 1 ingredients and cook for 10 minutes, stirring often.

02 Add stage 2 ingredients and cook for 5 minutes.

03 Add stage 3 ingredients and bring to the boil. Reduce heat and simmer, covered for at least 25 minutes, stirring occasionally. Remove lid for last 5 minutes.

04 Cook pasta according to packet instructions. Drain and return to pot. Add sauce and parmesan to pasta. Toss and serve.

Dietaries:

To make this recipe gluten free, use gluten free pasta. To make dairy free omit the cheese.
