Saucy Pork Pasta

I love the simplicity of this dish. It’s such an easy one and the kids really love the shredded ham!

Prep: 10 min | Cook: 25 min | Serves: 6

Saucy Pork Pasta

Stage 1:

  • 1 brown onion, diced

  • 1 large carrot, grated

Stage 2:

  • 250g shredded ham

  • 500g pork and veal mince

  • 700g jar passata

  • 120g baby spinach leaves, roughly chopped

  • ½ tsp ground chilli (optional)

  • salt + pepper, to season

Pasta:

  • 400g short style pasta

01 Cook pasta according to packet directions.

02 Meanwhile, heat 2 tbsp olive oil in a large deep saucepan over medium high heat. Add stage 1 ingredients and cook for 10 minutes, stirring often.

03 Add ham and mince. Stir to brown. Cook for 5 minutes.

04 Add remaining stage 2 ingredients, plus ½ cup of pasta water. Reduce heat to low and simmer uncovered for 10 minutes, stirring occasionally.

05 Drain pasta and toss through sauce. Serve.
