Chicken Taco Bowls

We just had to share this delicious Chicken Taco Bowl created by Cassie from @my_familyeats as it's so easy to make!⁠ The chicken is slow cooked and then added to bowls with a whole bunch of fresh and wholesome ingredients. ⁠And the best part is you can add any extra ingredients you'd like. Think grated carrot, diced red onion, avocado strips...the choice is yours!⁠

Prep: 10 min | Cook: 6 hrs | Serves: 4

Chicken Taco Bowls

Stage 1:

  • 4 chicken breast fillets

  • 1 cup water

  • 3 tbsp Mingle Mexican seasoning

Stage 2:

  • ½ cup taco sauce

  • 3 tomatoes, diced

  • 420g tin black beans, drained and rinsed

  • 420g tin corn kernels, drained and rinsed

  • 180g bag of baby spinach

  • 200g Mission Deli Style White Corn Strips

  • 1 cup tasty cheese, grated

01 Place stage 1 ingredients into a slow cooker. Cook on low for 6 hours.

02 Once cooked, shred the chicken with a fork and stir through the salsa sauce.

03 Divide shredded chicken and all remaining ingredients amongst 4 bowls. Serve.
