Mexican Loaded Spuds

I love a simple meal and so does the family - this ones a winner with everyone!!

Prep: 5 min | Cook: 50 min | Serves: 4

Mexican Loaded Spuds

  • 4 medium sized potatoes

  • 500g beef mince

  • 1 tbsp tomato paste

  • 30g Mingle Taco Seasoning sachet

  • 1 large avocado, mashed

  • 1 cup shredded tasty cheese

  • 300g packet Woolworths Finely Cut Coleslaw

  • 200ml sour cream

01 Preheat oven to 200°C.

02 Poke holes the the potatoes with a skewer. Place on a lined baking tray and drizzle with olive oil. Roast in the oven for 40 minutes until soft inside.

03 Heat a small frypan over medium high heat. Add mince and stir for 5 minutes, cooking until browned. Stir in tomato paste, taco seasoning and ¼ cup water. Cook for a further 2 minutes.

04 Remove potatoes from oven. unwrap from foil and cut into quarters. Distribute toppings onto potatoes: coleslaw, cheese, mince, avocado and sour cream.
