Satay Chicken

The flavours in this dish are so delicious and it makes for such a crowd pleasing dinner. Keep it interesting and change it up, by serving it with a variety of sides such as streamed greens, rice, naan bread or Greek yoghurt!

Prep: 15 min | Cook: 20 min | Serves: 4

Satay Chicken

Stage 1:

  • 2 tbsp soy sauce or tamari

  • 4 chicken fillets, diced

Stage 2:

  • 1 tbsp honey

  • ½ cup + 1 tbsp peanut butter

  • 400g tin crushed tomatoes

  • 1 tsp EACH ground cumin, chopped coriander leaves, garam masala, minced ginger

  • 1 cup chicken stock

Stage 3:

  • 1 brown onion, finely diced

  • 3 garlic cloves, finely minced

  • sides of choice: steamed rice, steamed greens, naan bread

01 Add stage 1 ingredients to a bowl. Set aside to marinate.

02 Whisk stage 2 ingredients together in a medium bowl.

03 Heat 1 tbsp olive oil in a large frypan over medium high heat. Add onion and garlic. Cook for 5 minutes, stirring often.

04 Add chicken and cook for a further 5 minutes, until browned.

05 Add sauce to pan. Reduce heat and simmer for 10 minutes, stirring occasionally. Season and serve with prepared sides.
