Chorizo Carbonara

A different spin on a simple classic, using chorizo instead of bacon.

Chorizo Carbonara

  • 400g spaghetti or fettuccine

  • 2 chorizo sausages, finely diced

  • 1 tsp minced garlic

  • 1 bunch broccolini, cut into 1cm lengths

  • 1 cup frozen baby peas

  • 1 cup light cooking cream

  • 2 eggs, lightly whisked

  • ⅓ cup finely grated parmesan

01 Cook pasta according to packet directions.

02 Meanwhile, place a large deep frypan over medium high heat. Add chorizo and garlic and cook for 5 minutes, stirring often.

03 Add broccolini and peas and cook for a further 5 minutes.

04 Add cream, eggs and half the parmesan to a bowl. Season and whisk until combined.

05 Remove frypan from heat. Add ⅓ cup pasta water and drained pasta. Pour in cream mixture and toss pasta for 1 minute, until sauce thickens slightly. Serve, topped with remaining parmesan.
