Pesto Pea Gnocchi

This is one of my FAVOURITE dishes to cook for the family as it's quick, tasty and oh so easy!

Prep: 5 min | Cook: 10 min | Serves: 4

Pesto Pea Gnocchi

Stage 1:

  • 800g potato gnocchi

  • 1 cup frozen peas

  • 1 medium zucchini, diced

Stage 2:

  • ½ cup cooking cream

  • 190g jar basil pesto

  • 2 cups torn baby spinach leaves

01 Cook gnocchi according to packet directions.

02 Heat 1 tbsp of olive oil in a large frying pan over medium high heat. Add remaining stage 1 ingredients and cook for 5 minutes, stirring occasionally.

03 Reduce heat to low and add stage 2 ingredients. Cook for a further 5 minutes, or until spinach has wilted and sauce is warmed.

04 Drain gnocchi and add to pan. Toss through sauce to coat.

To make this recipe gluten free, use a gluten free pasta.
