One Tray Gnocchi Bake

This has to be one of our family favourites! There’s so much flavour and it’s a made in 1 pan in the oven.

Prep: 15 min | Cook: 35 min | Serves: 4

One Tray Gnocchi Bake

Stage 1:

  • 3 garlic cloves, sliced

  • 1 red onion, roughly chopped

  • 1 medium zucchini, diced

  • 2 large tomatoes, diced

  • 150g mild salami, diced

  • ⅓ cup tomato paste

Stage 2:

  • 1 kg gnocchi, uncooked

  • 1 cup frozen peas

  • handful fresh basil, roughly torn

  • 1 cup hot vegetable stock

  • 1 cup grated mozzarella

  • ⅓ cup grated parmesan cheese

01 Preheat oven to 200°C.

02 Add stage 1 ingredients to a large 20cm x 30cm baking tray and drizzle with olive oil. Season and toss to coat. Bake in the oven for 25 minutes, or until roasted.

03 Remove from oven and stir in gnocchi, basil, peas and stock. Top wth cheese and return to oven for a further 10 minutes or until golden.

To make this recipe gluten free, opt for gluten free gnocchi.
