Veggie Patch Sausage Rolls

I love hidden nutrition, especially when I can sneak it into my kids (and husband!). These delicious sausage rolls will be devoured….guaranteed! Double the batch and freeze the extras, for a quick and easy lunch option for work, home or school.

Veggie Patch Sausage Rolls

Stage 1:

  • 1 carrot, peeled and grated

  • 1 celery stick, finely chopped

  • 1 small brown onion, finely diced

  • 1 cup grated zucchini, liquid squeezed out

  • 500g beef mince

  • 1 egg

  • 1 tbsp Worcestershire sauce

  • 1 tbsp parsley, finely chopped

  • 1 tbsp tomato paste

  • ½ tsp salt + ½ tsp pepper

Stage 2:

  • 1 egg, lightly beaten

  • 3 sheets thawed puff pastry

01 Preheat oven to 200°C.

02 Add stage 1 ingredients to a large bowl and mix together with hands, until well combined.

03 Cut pastry sheets in half. Divide mixture amongst 6 sheets, shaping each portion into a log the same length as the pastry. Roll pasty over to enclose filling and press pastry together with a fork to seal.

04 Cut each sausage roll into 5 and brush the tops with beaten egg. Place onto a lined tray, seam down. Bake for 30 minutes.
