Pizza Scrolls

These cheesy scrolls are made using pantry and fridge staples.⁠ Simply top your scroll base like you would a pizza, then roll, slice and bake, for a delicious lunch, snack or lunchbox option.⁠

Pizza Scrolls

  • 2 cups wholemeal self raising flour

  • 40g soft butter

  • 1 tsp salt

  • 1 tbsp mixed herbs

  • ½ cup shredded tasty cheese

  • ½ cup + 1 tbsp milk

  • 2 tbsp tomato paste

  • Topping options: mushroom, capsicum, pineapple, cheese, olives, onion, ham, salami, etc

01 Preheat oven to 200°C.

02 In a large bowl, use fingertips to rub butter into flour, until combined. Stir in salt, herbs and cheese.

03 Add milk and mix with a spoon until dough comes together (if dry add a little more milk).

04 Turn dough onto a lightly floured surface and knead until just combined. Use a rolling pin to roll dough into a 20 x 30cm rectangle.

05 Spread top with tomato paste and layer with favourite toppings.

06 Roll up lengthwise and slice into 12 pieces. Arrange close together on a tray and glaze with extra milk.

07 Bake for 20 minutes, until golden.
