Crispy Potato Rostis

These rostis are vegetable loaded and full of flavour, plus they freeze beautifully. Easy to make, simply throw everything into one bowl, mix and dollop in a hot frypan!

Crispy Potato Rostis

  • 1 cup grated potato

  • 1 cup grated carrot

  • 1 cup grated zucchini

  • 1 spring onion, finely chopped

  • ½ cup shredded tasty cheese

  • ½ cup grated parmesan cheese

  • 1 cup wholemeal plain flour

  • 3 eggs

  • 1 tsp smoked paprika

  • 1 tsp salt + ½ tsp pepper

01 Add all ingredients into a large bowl. Mix with a spoon until well combined.

02 Heat a large frypan over medium high heat and drizzle with olive oil.

03 Add ¼ cup spoonfuls of mixture to frypan and flatten slightly. Cook for 4 minutes, or until golden, then flip and cook for a further 2 minutes.
