Mayo Eggs

Mayo Eggs

  • 4 hardboiled eggs, peeled

  • 2 tbsp whole egg mayonnaise

  • 1 spring onion, finely sliced

  • salt and pepper, to season

01 Place eggs into a shallow bowl and mash with a fork.

02 Add remaining ingredients and mix to combine. Serve into rolls, sandwiches, wraps or spread onto toast.

Store: In a container in the fridge for up to one day.
