Portuguese Chorizo Pasta Salad

We are in love with this sensational salad by @colessupermarkets as it’s so rich with flavour and bursting with texture. It’s also completely versatile: serve it as a side dish, lunch, main meal or pop in a lunchbox.⁠ This vibrant salad combines the spicy and robust flavours of chorizo with creamy al dente pasta. It’s definitely a crowd-pleaser, ideal for picnics, barbecues or get togethers.

Portuguese Chorizo Pasta Salad

  • 300g penne rigate pasta

  • 1 tbsp olive oil

  • 2 chorizo sausages, thinly sliced

  • 200g haloumi, thinly sliced

  • ¼ cup sriracha mayonnaise

  • ¼ cup light sour cream

  • 350g pkt Coles Kaleslaw Salad Kit

  • 1 small red onion, thinly sliced

  • 2 tbsp chopped oregano

01 Cook pasta in a large saucepan of boiling water for 12 minutes or until al dente. Refresh under cold water. Drain well. Transfer to a large bowl.

02 Meanwhile, heat oil in a large frying pan over med-high heat. Add chorizo and cook, stirring, for 3 mins or until browned. Transfer to a plate lined with paper towel. Add haloumi to the pan. Cook for 1 min each side or until golden and heated through.

03 Whisk mayonnaise, sour cream and 2 tbsp warm water in a small jug until well combined.

04 Add the salad mix, onion, chorizo, haloumi and oregano to pasta in the bowl. Season and toss to combine.

05 Transfer pasta to a platter and drizzle with mayonnaise. Serve.
