Salami Egg Cups

These super simple Salami Egg Cups use minimal ingredients and are ready in just 20 minutes! They’re made by lining the cups of a muffin tin with slices of salami, creating a tasty base. Then a mixture of whisked cheese and egg is gently poured into each cup, before baking in the oven. The result is a satisfying and portable breakfast option, lunchbox filler, snack or on the go lunch.

Salami Egg Cups

  • 100g mild salami (12 slices)

  • 6 eggs

  • 1 tsp fresh or dried rosemary, finely chopped

  • salt and pepper, to season

  • ¾ cup shredded tasty cheese (optional)

01 Preheat oven to 180°C and lightly spray 12 muffin pan holes.

02 Add eggs, rosemary, salt and pepper to a small measuring jug and whisk until combined.

03 Place 1 slice of salami into each of the 12 muffin pan holes. Press down to form a cup shape.

04 Pour egg mixture evenly amongst 12 salami cups and top with shredded cheese, if using.

05 Bake in the oven for 10 minutes, or until golden. Serve.
