Vegetable Medley Tuna Slice
When you've got nothing much left in the fridge, this is a great recipe to knock up, as it uses mainly fridge and pantry staples. It’s also cheap, easy and super tasty, with a mild curry flavour - so it’s friendly for kids and those who don’t like a lot of spice.

Vegetable Medley Tuna Slice
1 cup frozen corn kernels
1 large zucchini, grated
1 cup mushrooms, finely chopped
425g tin tuna in springwater, drained
1 tbsp curry powder
6 eggs
1 cup wholemeal self raising flour
1 cup grated tasty cheese
01| Preheat oven to 175°C.
02 Press grated zucchini into a tea towel and twist to squeeze out moisture. Add to a large bowl with all remaining ingredients. Season and stir until well combined.
03 Pour into a lined 30 x 20cm baking tray and bake for 30 minutes or until cooked through
