Cheesy Chorizo Cornbread

Here’s a tasty, delicious and filling lunch option that the whole family will love (including lunchboxes!). Loaded with vegetables and flavour, this is a great recipe to bake, slice and freeze, for an easy go-to option on those busy days!

Prep: 20 min | Cook: 45 min | Serves: 6

Cheesy Chorizo Cornbread

Stage 1:

  • 2 chorizo sausages, finely chopped

  • 2 cups zucchini, coarsely grated

  • 1 cup carrot, coarsely grated

  • 1 cup frozen peas

Stage 2:

  • 410g can creamed corn

  • 6 eggs

  • 2 cups wholemeal self raising flour

  • 1½ cups grated tasty cheese

01 Preheat oven to 180°C.

02 Heat a frying pan over high heat. Add stage 1 ingredients and cook for 10 minutes, stirring often. Set aside, to cool slightly.

03 In a large bowl add remaining ingredients and whisk until combined. Add cooled chorizo mixture. Season and mix well.

04 Pour into a lined 20cm x 20cm deep baking tray. Bake for 45 minutes, or until cooked through.
