Green Eggs and Ham

If you’re like me and always have hardboiled eggs in the fridge, you’re going to love how quick and easy this recipe is. Perfect for lunch (or even breakfast!) especially when you have some fresh sourdough at hand.

Prep: 10 min | Serves: 2

Green Eggs and Ham

Stage 1:

  • 3 hardboiled eggs, peeled

  • 1 small avocado, flesh only

  • 30g feta, crumbled

Stage 2:

  • 4 thick slices seeded sourdough

  • 1 large tomato, sliced

  • 4 slices champagne leg ham, sliced into strips

01 Place stage 1 ingredients into a shallow bowl and mash together with a fork. Season to taste.

02 Spread mixture evenly between sourdough slices. Layer with sliced tomato and ham. Serve.
