Chorizo Zucchini Fritters

These easy fritters are nut free and full of flavour! They're the perfect weekend lunch option or mid-week lunchbox filler.⁠

Prep: 15 min | Cook: 20 min | Serves: 2

Chorizo Zucchini Fritters

Stage 1:

  • 250g (2) chorizo sausages, finely diced

  • 1 spring onion, finely sliced

  • 12 cherry tomatoes, halved

  • ¼ cup pitted black olives, finely chopped

  • 1 small zucchini, grated

Stage 2:

  • 4 eggs

  • 1 cup wholemeal plain flour

  • ½ cup shredded tasty cheese

  • 100g Greek style feta, crumbled

01 Heat a large frypan over medium high heat. Add chorizo and cook, stirring often, for 5 minutes. Add remaining stage 1 ingredients and cook for a further 5 minutes, stirring occasionally. Set aside to cool.

02 Combine eggs and flour in a large bowl and mix until combined. Add cheeses and cooled frypan mixture and stir until combined.

03 Heat a large frypan over medium heat and drizzle with 1 tbsp olive oil. Add ¼ cup spoonfuls of mixture to frypan. Flatten slightly. Cook for 3 minutes, or until golden, then flip and cook for a further 2 minutes.
