Loaded Nachos

This delicious recipe has become one of our favourite family weekend lunches - and it’s the perfect food for entertaining guests too! Loaded with wholesome vegetables, avocado and a sprinkle of cheese, you won’t be able to get enough of these nachos.

Prep: 10 min | Cook: 15 min | Serves: 4

Loaded Nachos

Stage 1:

  • 500g bag plain natural corn chips

  • 400g tin crushed tomatoes, drained

  • 400g tin black beans, drained and rinsed

  • ½ cup black olives, sliced

  • 1 cup frozen corn kernels

  • ½ red onion, finely diced

  • 1 cup grated tasty cheese

Stage 2:

  • 1 large avocado, diced

  • 1 cup sour cream

01 Preheat oven to 200°C.

02 Lay chips on a lined tray in a single layer, as best you can. Evenly sprinkle remaining stage 1 ingredients over chips.

03 Bake in the oven for 15 minutes, or until cheese has melted. Remove from oven and dollop with avocado and sour cream. Serve immediately.
