Carrot and Bacon Zucchini Slice

This is such a cheap, tasty and easy meal to make. Plus you can freeze it in slices, for quick access lunches!

Carrot and Bacon Zucchini Slice

Stage 1:

  • ¼ cup olive oil

  • 6 pieces short cut bacon, diced

  • 1 brown onion, finely diced

  • 1 medium zucchini, grated

  • 1 large carrot, grated

Stage 2:

  • 6 eggs

  • 1 cup wholemeal self raising flour

  • 1 cup grated tasty cheese

  • salt and pepper, to season

01 Preheat oven to 175°C.

02 Heat a large frying pan over medium high heat. Add bacon and half the oil. Cook for 3 minutes, or until browned.

03 Stir in remaining stage 1 ingredients and cook for 10 minutes, or until liquid has evaporated. Set aside to cool.

04 In a large bowl, whisk eggs and flour together until smooth. Add cheese, seasoning and cooled bacon mixture. Stir to combine.

05 Pour into a lined 30 x 20cm tray and bake for 30 minutes, or until cooked through.
