Carrot, Pumpkin and Corn Fritters
These fritters are vegetable loaded and full of flavour, plus they freeze beautifully. Easy to make, simply throw everything into one bowl, mix and dollop in the frypan!

Carrot, Pumpkin and Corn Fritters
1 cup corn kernels
1 cup grated carrot
1 cup grated pumpkin
1 cup shredded tasty cheese
1 cup wholemeal plain flour
3 eggs
1 tbsp Moroccan seasoning
salt + pepper, to season
01 Add all prepared ingredients into a large bowl. Mix with a spoon until well combined.
02 Heat a large frypan over medium high heat and drizzle with olive oil.
03 Whilst pan is heating, shape 8 balls from mixture. Add to frypan in batches and flatten into fritters. Cook for 4 minutes, or until golden, then flip and cook for a further 2 minutes.
