One Pan Chicken Pasta
I absolutely love pasta….especially when it’s made in 1 pan!! I mean, who doesn’t love a quick clean up!
Prep: 10 min | Cook: 20 min | Serves: 4
One Pan Chicken Pasta
Stage 1:
1 tbsp thyme, finely chopped
4 chicken thigh fillets, diced
4 white cup mushrooms, diced
2 cups broccoli, finely diced
2 cups grated zucchini
Stage 2:
3 cups chicken stock
300ml light cooking cream
2 tbsp dijon mustard
4 cups spiral pasta, uncooked
01 Heat 1 tbsp butter in a large deep saucepan over medium heat.
02 Add stage 1 ingredients and cook for 5 minutes, stirring often, until vegetables are soft and chicken is cooked.
03 Stir in remaining ingredients and season. Reduce to a simmer.
04 Cover and cook for 10 minutes, or until pasta is al dente. Remove lid for last 5 minutes of cooking. Stir occasionally. Serve.
