Chocolate Raspberry Brownies

I’m a big lover of brownies….especially ones that hide vegetables!

Prep: 15 min | Cook: 30 min | Makes: 20

Chocolate Raspberry Brownies

Stage 1:

  • 1 cup wholemeal self raising flour

  • 1 cup quick oats

  • ½ cup cacao powder

  • 1 tsp cinnamon

Stage 2:

  • ¾ cup tinned apple slices, mashed, until pureed

  • ⅓ cup maple syrup

  • 1 tbsp vanilla

  • ⅓ cup coconut oil, melted

  • 1 cup grated zucchini

Mix-ins:

  • ½ cup dark chocolate chips

  • 1 cup frozen raspberries

01 Preheat oven to 175°C.

02 Combine stage 1 ingredients in a mixing bowl.

03 Add stage 2 ingredients to a separate bowl. Stir to combine.

04 Pour wet mixture into dry mixture and mix. Stir in chocolate and raspberries until combined.

05 Scoop into a lined 20 x 20cm baking tray and bake for 30 minutes. Slice into 20 squares.

Store: In the refrigerator for up to 3 days or freeze for months.

Dietaries:

For a dairy free and vegan option, use a dairy free chocolate.
