Breakfast Bars

When you want a feel-good breakfast on the run, these are an easy go to. A great hand held option, they’re perfect to snack on in the car, especially on those mornings you’re running a little late! Keep them in the fridge for quick and easy access.

Breakfast Bars

Dry:

  • 3 Weetbix, finely broken up

  • ½ cup wholemeal self raising flour

  • 1 tsp cinnamon

  • ½ tsp salt

  • ½ tsp ground ginger

Wet:

  • ⅓ cup sultanas

  • ½ cup ripe mashed banana

  • ⅓ cup peanut butter

  • ⅓ cup honey or maple syrup

  • ½ cup warm water

Topping:

  • 1 tbsp chia seeds (optional)

01 Preheat oven to 170°C.

02 In a large mixing bowl, combine all dry ingredients.

03 In a separate bowl whisk wet ingredients.

04 Add wet mixture to dry and mix until fully combined.

05 Scoop mixture into a lined 20cm x 20cm baking tray. Smooth surface with the back of a wet spoon. Sprinkle with chia.

06 Cook for 25 minutes. Allow to cool before cutting into 8 bars.

STORE: In an air tight container in the fridge for up to 3 days, or freeze for months.
