Carrot and Blueberry Bars

These delicious wholefood bars make the perfect on-the-go breakfast or snack for those rushed days. They’re a filling feel-good option that are naturally sweetened and very filling.

Carrot and Blueberry Nourish Bars

Dry:

  • 1 cup oats

  • ½ cup shredded coconut

  • 1½ cups wholemeal self raising flour

  • ¼ tsp nutmeg

  • 1 tsp cinnamon

  • ½ tsp salt

Wet:

  • cup maple syrup

  • ⅓ cup coconut oil, melted

  • ½ cup hot water

Mix Ins:

  • 1 cup grated carrots

  • 1 cup frozen blueberries

01 Preheat oven to 160°C.

02 Combine dry ingredients in a mixing bowl. In a separate bowl, add wet ingredients and stir to combine.

03 Pour wet mixture into dry mixture and mix. Stir in carrot and blueberries until well mixed.

04 Scoop into a lined 20 x 20cm baking tray and bake for 45 minutes. Slice and serve.

Store: In an air tight container in the fridge for up to 3 days, or freeze for months.
