Bananarama Snack Bars

Such a dense and moist nourishing bar that’s bursting with flavour and texture.

Bananarama Snack Bars

Dry:

  • 1 cup self raising flour

  • 1 cup rolled oats

  • ¼ cup dates, finely diced

  • ¼ cup desiccated coconut

  • ¼ cup pepitas

  • ¼ cup sunflower seeds

  • ½ tsp cinnamon

Wet:

  • ⅓ cup honey

  • ¼ cup butter, melted

  • ½ cup mashed ripe banana

  • ½ cup Greek yoghurt

Topping:

  • 16 slices banana, to decorate

01 Preheat oven to 170°C.

02 In a large mixing bowl, combine all dry ingredients. In a separate bowl whisk wet ingredients.

03 Add wet mixture to dry and mix until fully combined.

04 Scoop mixture into a lined 20cm x 20cm baking tray and smooth surface with the back of a wet spoon. Press 16 banana slices onto the surface.

05 Cook for 35 minutes. Allow to cool before cutting into squares

Store: In an air tight container in the fridge for up to 3 days, or freeze for months.
