Have you got 5 minutes? If you do, you want to be making these bars. Hands down my easiest baked snack ever!!

Prep: 5 min | Cook: 20 min | Makes: 8

Chunky Monkey Bars

  • 1 cup very ripe banana, mashed

  • ½ cup desiccated coconut

  • ½ cup quick oats or quinoa flakes

  • ¼ cup dark chocolate chips

  • ½ tsp cinnamon

01 Preheat oven to 160°C.

02 Add all ingredients to a bowl and mix until combined.

03 Transfer batter to a lined 20 x 20cm baking tray and flatten surface. Bake in the oven for 20 minutes.

04 Allow to fully cool before turning out. Slice into 8 bars or 16 squares.

Store: In an air tight container in the fridge for up to 3 days, or freeze for months.

Dietaries:

To make this recipe gluten free, use quinoa flakes.  For a dairy free and vegan option, ensure the chocolate you use is vegan.
