Apricot Cheesecake Log

A deliciously sweet cheesecake slice, perfect to throw on your next grazing platter.

Apricot Cheesecake Log

  • 250g soft cream cheese

  • 1 cup desiccated coconut, plus extra for rolling

  • ½ cup almond meal

  • 10 dried apricots, finely chopped (approx ½ cup)

  • 2 tsp vanilla extract

  • 2 tsp honey

  • 1 tbsp chia seeds

01 Add cream cheese to a bowl and mash with a fork, until its texture is soft, like a spread. Add remaining ingredients and mix with the back of a fork.

02 With slightly damp hands, bring mixture together and shape into a log.

03 Sprinkle bench with extra coconut and roll log on top, until smooth and well coated.

04 Place on a tray in the freezer for 30 minutes to chill.

05 Remove and cut into 20 slices.

Store: In a container in the fridge for up to 5 days.
