I love this ‘cheats’ meatball pasta, that uses decased sausages instead of handmade meatballs! And bonus…it’s made in one pan, so minimal dishes it is!

Prep: 10 min | Cook: 30 min | Serves: 4

One-Pan Meatball Pasta

Stage 1:

  • 2 tbsp olive oil

  • 2 garlic cloves, finely diced

  • 1 red onion, finely diced

  • 1 large carrot, peeled + grated

  • 2 tbsp oregano, finely chopped

  • 6 gourmet beef or vegan sausages, decased

  • 2 tbsp tomato paste

Stage 2:

  • 400g tin crushed tomatoes

  • 4 silverbeet leaves, finely sliced

  • 1¾ cups beef or vegetable stock

  • 375g spiral pasta, uncooked

01 Heat oil in a large deep frypan over medium high heat. Add stage 1 ingredients and cook for 10 minutes, stirring often, until sausage is browned and crumbled.

02 Add remaining ingredients and bring to the boil. Reduce heat and cover, simmering for 20 minutes. Stir occasionally. Serve.

Dietaries:

To make this recipe gluten free, opt for gluten free sausages. For a vegan and vegetarian option, opt for vegetable stock and vegan sausages.
