Hulk Muffins

These wholesome snacks are loaded with baby spinach (which are tasteless btw), making them perfect for fussy eaters who won’t eat veg!

Hulk Muffins

Wet:

  • 120g baby spinach leaves

  • ⅓ cup coconut oil, melted

  • ⅓ cup + 1 tbsp honey

  • 2 eggs

  • 2 medium very ripe bananas

  • ½ cup milk or water

  • 1 tbsp vanilla extract

Dry:

  • 1¾ cups wholemeal self raising flour

  • 1 tsp ground cinnamon

01 Preheat oven to 180°C.

02 Blend baby spinach leaves in a food processor until finely chopped. Add remaining wet ingredients and blend until smooth.

03 Combine dry ingredients in a large bowl. Make a well in the centre and pour in wet mixture. Mix with a big spoon, until just combined.

04 Divide mixture across 12 greased muffin tin cups. Bake in the oven for 20 minutes.

Store: In a container in the cupboard for up to 3 days or freeze for months.
