Healthier Honey Joys

Honey joys are a classic treat that we’ve made healthier by incorporating nutritious seeds and the powerful benefits of @trustnatureaustralia Manuka honey. By adding an assortment of seeds like chia, flax, and sunflower seeds you’ll be introducing a rich source of essential nutrients, as well as enhancing the crunchiness and texture of the honey joys. These delicious morsels are nut free, dairy free, egg free and gluten free (if using gluten free cornflakes) and are sure to satisfy your sweet tooth.

Healthier Honey Joys

  • 4 cups cornflakes

  • ¾ cup shredded coconut

  • ½ cup sunflower seeds

  • ¼ cup sesame seeds

  • 1 tbsp flaxseeds

  • ¼ cup Trust Nature Manuka Honey

  • 3 tbsp coconut oil or butter

01 Preheat oven to 150°C and line 15 muffin pans with paper cases.

02 Add cornflakes to a large bowl.

03 Add coconut and seeds to a smaller bowl. Mix to combine, then sprinkle over cornflakes. Set aside.

04 Place a small saucepan over medium heat. Add honey and coconut oil, stirring until melted.

05 Pour honey mixture over cornflake mixture and stir until all ingredients are well coated and seeds are evenly dispersed.

06 Divide mixture across 15 paper cases. Cook in oven for 10 minutes.

Store: In the fridge for up to 5 days or in the freezer months.
