Goodness Me Muffins
I don’t think I could have made these more jam packed with nutrition if I tried! I’m talking fruit, nuts, grains, dairy and vegetables in one deliciously sweet muffin. Wowsers!

Goodness Me Muffins
Dry:
1¾ cups wholemeal self raising flour
1 tsp ground cinnamon
½ tsp salt
1 cup carrot, peeled + grated
1 cup grated apple
⅓ cup currants
Wet:
⅓ cup olive oil
⅓ cup maple syrup or honey
2 eggs
½ cup mashed banana
½ cup plain Greek yoghurt or coconut yogurt
1 tsp vanilla extract
01 Preheat oven to 175°C.
02 Combine dry ingredients in a large bowl.
03 Whisk wet ingredients together in a separate bowl.
04 Pour wet mixture into dry and mix with a spoon until just combined.
05 Divide mixture across 12 lightly greased muffin tin cups. Bake in the oven for 20 minutes.
Store: In a container in the fridge for up to 3 days or freeze for months.
