Confetti Cupcakes

Confetti Cupcakes
Wet:
1 cup milk of choice, room temperature
½ cup maple syrup
¼ cup coconut oil, melted
1 tbsp vanilla extract
Dry:
1¾ cups self raising flour
¼ tsp salt
Mix Ins:
¼ cup sprinkles
01 Preheat oven to 175°C.
02 Whisk wet ingredients together in a large bowl. Sift in dry ingredients and whisk until just combined.
03 Stir in sprinkles. Don't over mix.
04 Divide the mixture across 12 patty pans, filling half full.
05 Bake for 20 minutes. Allow to cool before topping with chosen icing.
Cream Cheese Icing
250g cream cheese
3 tbsp honey or maple syrup
01 Add cream cheese to a large deep bowl. Beat with electric beaters, until smooth.
02 Add remaining ingredients and beat until combined.
03 Spread on cooled baked goods immediately or store in the fridge in a container.
