Cheesy Chive Muffins
Cheese and chives have always tasted so delicious together and now they can be enjoyed in a savoury muffin!

Cheesy Chive Muffins
Fry pan:
1 tbsp olive oil
1 small red onion, finely diced
100g frozen chopped spinach portions
250g cream cheese
Wet:
1 egg, lightly whisked
1 cup sour cream
½ cup grated tasty cheese
2 tbsp chopped chives
1 tsp salt
Dry:
2 cups self raising flour
01 Preheat oven to 180°C.
02 Heat oil in a frying pan over medium high heat. Add onion and spinach. Cook for 10 minutes, until onion has softened, stirring often.
03 Reduce heat to low and stir in cream cheese. Stir until combined then set aside to cool slightly.
03 In a large bowl whisk together wet ingredients. Add frypan mixture, season and whisk until combined. Stir in flour, until mixed.
04 Divide mixture across 12 greased muffin tin cups. Bake in the oven for 20 minutes.
