Berry Delicious Muffins
Calling all berry lovers! These muffins are jam packed with so much flavour and texture that I guarantee they'll be going straight on your weekly snack rotation.

Berry Delicious Muffins
Wet:
1 egg
½ cup olive oil
½ cup milk of choice
⅓ cup date syrup or honey
½ cup Greek yogurt or coconut yoghurt
2 tsp vanilla essence
Dry:
2 cups wholemeal self raising flour
½ cup desiccated coconut
½ cup cacao nibs (can substitute for chocolate chips)
Mix ins:
2 cups mixed berries
01 Preheat oven to 180°C.
02 Add wet ingredients to a large bowl and whisk until combined.
03 Add dry ingredients and mix until just combined.
04 Fold in berries. Don't over mix.
05 Divide mixture across 12 lined muffin tin cups and bake for 20 minutes, or until cooked through.
Store: In a container in the cupboard for up to 3 days or freeze for months.
