Chocolate Blueberry Muffins

These wholesome muffins are packed with nutrition and, making them perfect for snacks or to pack in lunchboxes.

Chocolate Blueberry Muffins

Wet:

  • 1 cup tinned apple slices, mashed

  • 2 eggs, lightly whisked

  • ⅓ cup maple syrup

  • ¾ cup Greek yoghurt

  • 2 tsp vanilla extract

Dry:

  • 2 cups wholemeal self raising flour

  • 1 tsp ground cinnamon

  • ½ tsp salt

Mix Ins:

  • 1 cup frozen blueberries

  • ½ cup dark chocolate chips

01 Preheat oven to 175°C.

02 Whisk wet ingredients together in a large bowl.

03 Add dry ingredients and mix until just combined.

04 Stir in blueberries and chocolate until dispersed.

05 Divide mixture across 12 lightly greased muffin tin cups. Bake in the oven for 20 minutes.

Store: In a container in the cupboard for up to 3 days or freeze for months.

Dietaries:

For a dairy free option use coconut yoghurt and dairy free chocolate.
