Chocolate Fudge Balls
100g 70% dark chocolate
150g (10) medjool dates, pitted
¾ cup cacao powder
1 cup almond meal or oat flour
¼ tsp salt
1 tbsp coconut oil, melted
1 tsp vanilla extract
¼ cup hot water
01 Soak dates in boiling water for 5 minutes.
02 Meanwhile microwave chocolate on low in 30 second bursts for 1-2 minutes, stirring occasionally, until melted.
03 Drain dates and add to a food processor, along with melted chocolate. Add all remaining ingredients and process on high until everything is combined.
04 Roll out 10 balls - if mixture is too sticky, place in fridge for 5 minutes to firm up. Roll in extra cacao powder, if desired.
Store: In the fridge for up to a week or the freezer months.
