Breakfast Balls

These balls make for a great on-the-go breakfast as they’re packed with typical breakfast ingredients. You can also press this mixture into a 20 x 20cm baking dish and slice, if you prefer a bar option.

Breakfast Balls

  • ½ cup ripe banana, mashed

  • 8 Weetbix, finely crushed

  • ½ cup peanut butter

  • 2 tbsp pepitas

  • 2 tbsp sunflower seeds

  • 2 tbsp craisins

  • ¼ cup coconut oil, melted

  • 1 tbsp honey or maple syrup

  • 1 tbsp mixed spice

  • ½ tsp salt

01 Add all ingredients to a large bowl and mix with the back of a fork until fully combined.

02 Using damp hands, roll into 16 balls. Refrigerate until firm.

Store: In an airtight container in the fridge for up to 3 days, or freeze for up to 3 months
