Apricot Cheesecake Balls

If you’re a lover of cream cheese, these apricot balls will be right up your alley!

Apricot Cheesecake Balls

  • 250g soft cream cheese

  • 1 cup desiccated coconut, plus extra for rolling

  • ½ cup almond meal

  • 10 dried apricots, finely chopped (approx ½ cup)

  • 2 tsp vanilla extract

  • 2 tsp honey

  • 1 tbsp chia seeds

01 Add cream cheese to a bowl and mash with a fork, until its texture is soft, like a spread. Add remaining ingredients and mix with the back of a fork.

02 With slightly damp hands, bring mixture together, then roll out into 15 balls.

03 Roll each ball in extra coconut, until coated. Refrigerate until firm.

Store: In an airtight container in the fridge for up to 3 days, or freeze for up to 3 months.
