Banana Custard

Banana Custard

STAGE 1

  • 1 egg

  • ¼ cup corn flour

  • 1 tbsp maple syrup

  • pinch salt

STAGE 2

  • 2 cups milk

  • 1 ripe banana, mashed until very smooth

  • walnuts, to top (optional)

01 Whisk stage 1 ingredients together in a small saucepan until smooth.

02 Add a dash of the milk and whisk to make a smooth paste. Slowly whisk in remaining milk and banana.

03 Place saucepan over high heat and whisk continuously for 8 minutes, or until custard thickens.

04 Remove from heat and serve warm with a sprinkling of crushed walnuts.

Dietaries:

For a dairy free option use a dairy free milk such as soy, oat or almond.
