Slow Cooked Pulled Pork Tortillas

Don’t let the size of this recipe fool you….it’s incredibly simple! Just throw you pork and marinade into a slow cooker, then serve it up 5 hours later into tortillas.

Prep: 15 min | Cook: 5 hrs | Serves: 4

Slow Cooked Pulled Pork Tortillas

Slow cooker:

  • 1kg pork scotch fillet steaks

  • ¼ cup honey

  • 1 tbsp dijon mustard

  • 2 tsp smoked paprika

  • 2 tsp dried oregano

  • 2 tsp dried salt flakes

  • 1 tsp dried chilli flakes

  • 1 cup tomato passata

  • 2 tbsp apple cider vinegar

  • 2 tsp minced garlic

Tortilla ingredient:

  • 8 Tortilla wraps + corn kernels + feta + cherry tomatoes + avocado + sliced red cabbage

01 Heat a frying pan over medium high heat with 1 tbsp olive oil. Add pork and cook for 2 minutes on each side, until browned. Transfer to a slow cooker with pan juices.

02 Whisk remaining stage 1 ingredients together in a small bowl. Add to slow cooker.

03 Cover with a lid and cook on low for 5 hours, or until tender. Shred pork with forks and serve into tortillas with toppings.

Dietaries:

To make this recipe gluten free, opt for gluten free wraps. To make it dairy free, omit the feta.
