Pulled Pork and Slaw Burgers

This is such a simple meal to make and only requires 10 minutes prep. Just pop the pork and marinade into the slow cooker and then 5 hours later serve it up into buns with slaw!

Pulled Pork and Slaw Burgers

Slow Cooker:

  • 1kg pork scotch fillet steaks

  • ¼ cup honey

  • 1 tbsp dijon mustard

  • 2 tsp smoked paprika

  • 2 tsp dried oregano

  • 2 tsp dried salt flakes

  • 1 tsp dried chilli flakes

  • 1 cup tomato passata

  • 2 tbsp apple cider vinegar

  • 2 tsp minced garlic

Burger Ingredients:

  • 4 burger buns + packet coleslaw kit

01 Heat a frying pan over medium high heat with 1 tbsp olive oil. Add pork and cook for 2 minutes on each side, until well browned. Transfer to a slow cooker with pan juices.

02 Whisk remaining slow cooker ingredients together in a small bowl. Add to slow cooker.

03 Cover with a lid and cook on low for 5 hours, or until tender. Shred pork with forks and serve into buns with salad kit of choice.
