Hearty Pea and Ham Soup

Chunky, hearty and bursting with flavour, this slow cooked soup makes for an amazing meal, especially when served with a thick slice of buttered sourdough!

Hearty Pea and Ham Soup

Stage 1:

  • 2 stalks celery, roughly chopped

  • 2 carrots, roughly chopped

  • 1 brown onion, roughly chopped

  • 1 leek, white part only, roughly chopped

  • 3 garlic cloves, crushed

Stage 2:

  • 1⅓ cups green split peas, rinsed

  • 800g ham hock

  • 1.5L (6 cups) cold water

  • salt and pepper, to season

01 Heat 1 tbsp olive oil in a large stockpot or slow cooker. Add stage 1 ingredients and cook for 5 minutes, stirring often.

02 Add remaining ingredients. Bring to the boil, then reduce to a simmer. Cover and cook for 8 hrs.

03 Remove ham hock from soup and process pea mixture with a stick mix until smooth or slightly chunky.

04 Remove meat from bone and coarsely chop. Return meat to soup. Serve.

Store: In an air tight container in the fridge for up to 3 days, or place in the freezer for months.
